Squash Casserole
Ingredients:
4 c. cubed squash [cooked]
1 lb. bulk sausage [fried and drained]
1 c. dry bread crumbs
1\4 c. chopped green pepper
1\4 c. onion [chopped]
1\2 c. grated parmesan cheese
2 eggs [beaten]
1\2 c. milk
1\2 tsp. salt
Directions:
Place squash and a small amount of water in sauce pan. Cover and cook for 8-10 min. or till tender. Drain.
Add all ingredients and mix well. Pour into a greased 11 X 7 X 2 in. baking dish. Bake uncovered at 325 degrees for 30-35 min.
